Tasting - Dynamite Cabernet Sauvignon

Online Review(via klwines.com): The vintage started off unusually cool, with rising temperatures in August and September, allowing for flavor complexity to develop as the fruit ripened. Fruit from this cool site is characterized by naturally bright acidity and for imparting a distinctive earthy minerality to the wine. It was aged for fourteen months in a combination of American, French, and European oak. From the winery: "The wine's deep purple color, flecked with violet highlights, hints of the depth and complexity of this big yet approachable wine. Dark aromas redolent of black cherry, berry, plum and tobacco open the profile and continue onto the palate. Subtle undertones of cedar and graphite add layers to the toasty backbone of vanilla and baking spices. Structured tannins accompany the peppery-black fruit into a long, satisfying finish. Pair this full-bodied wine with winter roasts or grilled steaks."

My Review: This wine has a deep purple-red appearance and a very interesting toasty and creamy berry aroma. The flavor is slightly dry, with a medium body and smooth intensity. I thought this wine was okay, but I definitely think I would enjoy it more if paired with food. Various reviews suggested pairing this with aged gouda or parmesean, other strong aged cheeses, and steak. If I have this wine again I will test it with these foods to see how they bring out the flavors of the wine.
